I think you've chosen a really interesting topic for this assessment and I've found some sources that might assist in some potential areas (political engagement for climate activism) for your textbook chapter.
1. Fisher, D.R., Nasrin, S. (2020) Climate activism and its effects. WIREs Climate Change 12, 1-11. DOI: 10.1002/wcc.683
Article looks at interaction of climate activism and political engagement. Touches on the impacts of the coronavirus and subsequent impacts on online mediums regarding climate activism.
Also addresses the current state of climate activism and addresses some areas of future research.
2. Neas, S., Ward, A., Bowman, B. (2022) Young people’s climate activism: A review of the literature. Secular Political Participation 4. https://doi.org/10.3389/fpos.2022.940876
Considers a large number of sources that might be useful for this section on political engagement. Observes trends in youth climate activism and addresses youth voices in social media and news outlets. Also looks at some areas for future research which might be a good heading/section in your textbook chapter. Greta Thunberg is looked at in detail which might be a good case study or learning theory idea.
