Baicai/bok choy is a vegetable. It belongs to the cabbage family. It does not look like the round European cabbages or huangyabai (Chinese leaves) found in Western supermarkets. Its white stalks look like celery without the stringiness. The dark green, crinkly leaves of the most common type are like lettuce.
